The almonds go through roasting processes with controlled temperature and time so that there is no loss of nutrients, and mechanical extrusion where the separation of cocoa cake and cocoa butter occurs. The pie grinding process is carried out, alkalinization to eliminate impurities, refinement to obtain a fine powder with standardized micron and sieving.
